Sparkling wine categories

Quality sparkling wine

Quality sparkling wine (“sekt”) is a product made from fresh grapes, grape must or wine through a process of primary or secondary fermentation. The production period must last at least six months for the Charmat method or nine months for the traditional method of bottle fermentation. The pressure from carbon dioxide produced solely from fermentation must reach at least 3.5 bars, and the cuvée for quality sparkling wines must be at least 9% alcohol by volume (abv).

Sparkling wine

Sparkling wine is produced the same way as sekt, but is not subject to a minimum production period.The pressure from carbon dioxide produced solely from fermentation must reach at least 3 bars, and the cuvée for quality sparkling wines must be at least 8.5% abv. It is important to add that Bohemia Sekt produces all its sparkling wines as sekts (quality sparkling wines).

Production methods

Traditional method (méthode traditionnelle)

VTerms such as “fermented in bottle using the traditional method” or “classic method” or “classic traditional method” may only be used to describe a sparkling wine with a controlled designation of origin or geographic classification of a third country, or a quality sparkling wine if the product:

1. Acquired carbon dioxide through secondary alcohol fermentation in the bottle
2. Constantly remained in contact with the lees for at least nine months at the same facility from the moment the cuvée was created
3. It has been separated from the lees through disgorgement.

Transversage method

The label may feature the term “fermented in bottle”. This is mainly used in the transversage method of sparkling wine production. The product does ferment in bottles, but unlike the traditional method, the lees are removed through filtration. It can become sparkling wine after just three months.

Charmat method

This designation means that the sparkling wine was produced through fermentation in closed pressurised vessels.

The following may also appear on the label:

Name of the wine sub-region, if at least 85% of wine grapes used to produce the cuvée come from this wine sub-region.
Name of the variety, if at least 85% of wine grapes used to make the product come from this variety.
Names of at least three varieties, if all of the wine grapes used to make the product come solely from these varieties.
Name of the wine region , where the wine was produced and the country of origin of the wine or wine grapes, if at least 50% of the product was made from these wine grapes or wine.

HOW TO SERVE

Chill the bottle to 3 – 5o and remove the capsule.

Twist the wire closure (muselet) and remove it from the cork.

Hold the bottle at a 45 degree angle. Grasp the cork in the palm of your left hand. Now use your right hand to turn the bottle in one direction until the cork becomes loose.

Serve in champagne “flutes”, filling the glass only about half way.

Sparkling wine and strawberries

The most popular pairing for looks and flavour. A combination that adds an elegant touch to any glass of sparkling wine. Perfect for a summer’s day, it couldn’t be easier to prepare.

 

Ingredients to go with Bohemia Sekt:

- fresh strawberries

Instructions:

- spear a fresh washed strawberry on a cocktail stick and drop it into a glass of well-chilled sparkling wine

 

Don’t forget:Use fresh strawberries, not canned or frozen ones (a frozen strawberry defrosted in the microwave will never be as good as a fresh one). Before spearing the strawberry make sure it is healthy and not bruised or rotten. If you don’t have fresh strawberries, leave this recipe for another time or try our Fragolini suggestion as an alternative.

Dancing cranberries

Try this new, fun way of enjoying a glass of fizz. You and your guests are sure to fall in love with its fantastic taste and with the crazy way the dried cranberries dance in the bubbles. It’s easy to make.

 

Ingredients to go with Bohemia Sekt:

- dried cranberries

Instructions:

- carefully rinse the dried cranberries in lukewarm water
- toss about five cranberries into a glass of sparkling wine
- serve immediately

 

Don’t forget: You must rinse the cranberries, otherwise they will leave an ugly, oily coating on the surface of the wine and down the sides of the glass. Pour the wine into the glass first and only then toss in the cranberries – the wine will foam up too much if you pour it onto the cranberries.

Hugo

This highly refreshing cocktail from northern Italy will put you in mind of a sunny summer’s day but can be enjoyed at any time. Better still, it only takes a moment to make.

 

Ingredients to go with Bohemia Sekt:

- 2 cl of elderflower syrup - mint leaves and lime wedges

Instructions:

- put two or three small ice cubes in a champagne glass
- pour over 10 cl of Bohemia Sekt demi sec
- squeeze the lime wedges and put them into the glass
- add 1 cl of elderflower syrup
- garnish with a sprig of mint

 

Tip: Use alcohol-free Bohemia Sekt instead of Bohemia Sekt demi sec to create a Virgin Hugo.

Fragolini

This fantastic alternative to sparkling wine with strawberries is easy to prepare at any time of year. With a “summer” Fragolini, you and your guests can enjoy the marvellous flavour of strawberries even when they aren’t in season.

 

Ingredients to go with Bohemia Sekt:

- good-quality strawberry purée with a fruit content of at least 50%

Instructions:

- pour 1.5 cl of the purée into a glass - pour sparkling wine slowly down the side of the glass onto the purée
- add a cocktail stirrer or stick
- garnish with a fresh strawberry on a cocktail stick if desired

 

Tip: Stir gently when serving. It’s the best way to blend the purée with the wine without the cocktail losing its fizz.

Bellini

This amazing summer cocktail can be made at any time of year. It originates from Venice, the city of lovers, but it can be enjoyed by more than two. It’s easy to prepare and will turn any get-together into a special occasion.

 

Ingredients to go with Bohemia Sekt:

- good-quality peach purée with a fruit content of at least 50%

Instructions:

- pour 1.5 cl of the purée into a glass
- pour sparkling wine slowly down the side of the glass onto the purée
- add a cocktail stirrer or stick
- garnish with a slice of peach on a cocktail stick if desired

 

Tip: Stir gently when serving. It’s the best way to blend the purée with the wine without the cocktail losing its fizz.

Kir Royal

Give this right royal French-born delicacy a try. It’s easy to prepare at any time of year.

 

Ingredients to go with Bohemia Sekt:

- good-quality blackcurrant syrup with a high fruit content

Postup:

- pour 1.5 cl of the purée into a glass
- pour sparkling wine slowly down the side of the glass onto the syrup
- add a cocktail stirrer or stick
- garnish with a bunch of blackcurrants or a red grape on a cocktail stick if desired

 

Tip: Stir gently when serving. It’s the best way to blend the syrup with the wine without the cocktail losing its fizz.

Mimosa

You’ll be wowed by this amazing combination of Bohemia Sekt and oranges. It’s easy to make whatever the time of year.

 

Ingredients to go with Bohemia Sekt:

- 10 cl of freshly squeezed orange juice

Instructions:

- pour 10 cl of Bohemia Sekt demi sec into a champagne glass
- top up with fresh orange juice made from well-chilled ripe oranges
- garnish with a slice of orange if desired

 

Don’t forget:Most shop-bought orange juices cannot rival the flavour of freshly squeezed oranges. It’s worth going the extra mile to make the drink properly.

Koktejl plný vášně

The name of this cocktail says it all. Spice up your romantic evening with a cocktail full of fantasy and fervent flavours.

 

Ingredients to go with Bohemia Sekt:

- use Bohemia Sekt rosé demi sec
- 4 cl of Pražská vodka
- 3 cl of elderflower syrup
- 1 cl of fresh lime juice
- 6 cl of freshly squeezed pink grapefruit juice
- Mattoni mineral water - cocktail shaker

Instructions:

- mix the vodka, syrup, lime juice and grapefruit juice in the cocktail shaker
- shake vigorously - pour this mix into a champagne coupe
- top up with Bohemia Sekt rosé demi sec and Mattoni mineral water

 

Tip: Garnish with strawberries, blueberries and fresh basil leaves.

french 75

This drink was created in 1925 at Harry’s New York Bar in Paris, where they serve it to this day. Needless to say, you don’t have to travel that far to try it. This refined, original cocktail is easy to make at home.

 

Ingredients to go with Bohemia Sekt:

- we recommend using Bohemia Sekt brut
- 6 cl of Dynybyl gin
- 4 cl of freshly squeezed lemon juice
- 2 cl of simple syrup
- 1 cl of anise liqueur
- cocktail shaker and ice

Instructions:

- fill the cocktail shaker at least half full with ice
- add the gin, lemon juice, the syrup and the anise liqueur (use less of the liqueur if you prefer)
- shake vigorously
- pour this mix into a champagne coupe
- top up with Bohemia Sekt brut
